This is not a bug, but a feature of iOS. There are a lot of articles on the web that talk about this. A quick summary:
If you have seen apple advertising material for the iPhone and iPad, notice the time is always 9:41 AM.
The first iPhone was launched at 9:41 AM. Check it out from the first liveblog at the launch of the iPhone.

Yes it is a little weird, but I am just highlighting that it would take too much work for me to modify the screen image to show 9:41.
Anytime you use a screen recording over a cable iPhone and iPad show time as 9:41 and a full battery and full carrier signal.
Unfortunately there is nothing I can do about this.
